Oil Infused Recipe : Lemon Avocado Toast

I don’t know how it became so popular but I all know is avocado toast is delicious! This version is packed with flavor and takes less than 5 minutes to pull together which is my kind of recipe! -Lauren Dunaway

INGREDIENTS

  • 1 large ripe avocado (or 2 small)

  • 1 tsp lemon juice

  • ½ tsp sea salt and freshly ground pepper

  • 1 drop Basil Vitality

  • 1-2 drops Lemon Vitality

  • ½ cup crumbled feta

  • 1 tbsp finely chopped parsley

  • 2-4 slices of bread, toasted

INSTRUCTIONS

  1. Mash the avocado, lemon juice, salt, pepper in a bowl.

  2. Use the toothpick method to add the Basil Vitality and Lemon Vitality taste. Start small and add more if you want!

  3. Add the feta and parsley and gently mix to combine

  4. Taste and add more lemon juice and salt if needed!.

  5. Serve immediately on toast and sprinkle with some more crumbled feta and a few fresh herb leaves.

This was a fun fact I’d never heard- you can substitute 1½ cup frozen peas (thawed) in place of the avocado if you can't find any ripe ones. If using peas in place of the avocado, thaw them first and use a food processor to blend them with all the other ingredients except the feta. Then place the pea mixture in a bowl and crumble in the feta and stir to combine! Who knew?!
