Oil Infused Recipe : Sesame Orange Chicken
I’ve heard that there is this delicious orange chicken from Trader Joe’s but since I’m GF I couldn’t eat it. When I found this recipe and also realized it took 10 minutes in the Instant Pot I was sold! There are so many ways you could modify this and different things you could serve it with! -Lauren Dunaway
INGREDIENTS
2T avocado oil or coconut oil
2/3 cup coconut aminos
3T tomato paste
¼ cup raw honey
4 cloves minced garlic
2 inches fresh peeled and grated ginger
½ cup bone broth (or you can use ¾ cup fresh-squeezed orange juice if you prefer!)
½ tsp black pepper
1 pinch red pepper flakes
1½ pounds chicken breast cut into bite-size pieces (can do this from frozen!)
10 drops Orange Vitality
2T arrowroot powder (optional)
2T sesame seeds
INSTRUCTIONS
In the stainless-steel insert of your Instant Pot, combine the avocado oil, coconut aminos, tomato paste, sweetener, garlic, ginger, bone broth, pepper, and pepper flakes. Whisk together.
If thawed, cut chicken into bite-size chunks and add to the sauce mix. If frozen, place whole, frozen chicken breasts into the sauce.
Place the lid on the Instant Pot, making sure the seal is in place. Close the vent.
Press the "Manual" or "Pressure Cook" button and adjust the time to 10 minutes (if thawed and cut into bite-size pieces) or 25 minutes (if frozen and whole chicken).
When the pot beeps, immediately release the pressure.
If you cooked whole chicken breasts, remove them from the sauce and cut into bite-size pieces. Then, return to the sauce.
Press the "Saute" button and bring the sauce to a simmer.
Add orange essential oil and stir. Taste and add more if desired. You may also more honey here or a bit of stevia if more sweetness is desired.
If you want a sticky, thick sauce, whisk in 2 tablespoons of arrowroot powder.
Finally, stir in sesame seeds and serve!
Doesn't this sound delicious! You can serve it over cauliflower-rice or spaghetti squash or zoodles or basmati rice!
